Japchae Noodles with Chicken

I definitely have my favorite noodle dishes and this is one of them. If you don’t like spicy noodles I recommend to give this a try as it’s not spicy but full of flavor and has great texture

Instructions

Step 1
Place glass noodles into a dish and cover with 1 tbsp dark soy and boiling water then place a plate on top and let them soak for 5 minutes . Then strain and add a few drops of toasted sesame oil to prevent them sticking . Please be aware different Glass noodles require different cooking . Some may need to be cooked in boiling water for 6 minutes or so so check the package instructions

Step 2
Next pour boiling water over the spinach black ten seconds then rinse with cold water and squeeze it out and set aside

Step 3
Make the sauce in a bowl by adding light soy brown sugar 1 tbsp of dark soy and 1 1/2 tbsp of toasted sesame oil and mix together . Now pour 1 tbsp of that over the over very thinly sliced chicken breast

Step 4
Add some oil to a hot wok then stir fry the chicken for 2-3 minutes . Next add the thinly sliced onions carrots and peppers and stir fry another 3 minutes before adding the sliced mushrooms

Add the crushed garlic then add the sauce and stir fry two more minutes
Step 6
Toss in the noodles turn off the heat then stir in the spinach and garnish with some sesame seeds
