Ingredients

1.5 poundsboneless skinless chicken breasts
or thighs, cut into bite-sized pieces
2 tablespoonsolive oil

2bell peppers
red, green, or yellow, thinly sliced
2 cupsbroccoli florets
1 cupsnap peas

fresh ginger
1-inch piece, grated

1 headcauliflower
washed and chopped into florets

Instructions
Step 1
Prepare the Chicken Stir-Fry:

In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat.

Add the thinly sliced onion, bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp. Remove the cooked vegetables from the skillet and set them aside.

In the same skillet, add the minced garlic and grated ginger. Sauté for about 1-2 minutes until fragrant.

Add the bite-sized chicken pieces to the skillet. Cook for about 5-7 minutes or until the chicken is no longer pink and cooked through.

Return the cooked vegetables to the skillet with the cooked chicken.

In a small bowl, whisk together the low-sodium soy sauce and oyster sauce (if using). Pour the sauce over the chicken and vegetables. Stir well to combine and heat through. Season with salt and black pepper to taste.

Prepare the Cauliflower Rice:

Place the cauliflower florets in a food processor and pulse until they resemble rice-like grains. You can also use a box grater to grate the cauliflower.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes, or until it becomes tender and slightly golden. Season with salt and black pepper to taste.
