Step 1
In a pan saute onions, sweet potato, and garlic for 10 minutes/ until the sweet potatos are tender. Let it cool. Add sweet potato mixture, spinach, breadcrumbs, salt, pepper, and eggs to the quinoa. Mix it well. Form into patties. Fry patties (arnd 2-3 mins per side, til golden) Serve & Enjoy! (Great served with spicy mayo!)
