Step 1
Cook udon for 3 mins. Drain & Set aside. Heat oil and add carrot, broccoli, ginger, garlic, shitake, cremini, & eggplant
Step 2
Add sesame oil, mirin, hoisin, teriyaki sauce, duck sauce, chili garlic sauce. Stir to coat vegetables. Add enoki mushrooms & toss. Add udon. Toss. Serve. & Enjoy!
