Instructions

Step 1
Heat up olive oil in pan, over medium heat. Then add diced onions, and cook for 3 minutes
Step 2
Add diced red pepper with a pinch of salt and cook until soft
Step 3
Add minced garlic and cumin. Season with salt pepper. Cook until fragrant. Optionally add other spices such as garlic powder, red pepper flake, paprika, etc.
Step 4
Mix in crushed tomato and then mix in corn and cook for 2 minutes
Step 5
Add rinsed beans (all 3 cans) and cook on low until desired consistency (stirring often)
Step 6
Add 1 cup of chicken broth (or any broth of your choice) and continue cooking on low until desired consistency
Step 7
Serve over white rice and cilantro
