Step 1
make scrambled egg first seasoned s&p, low heat and set aside.
Step 2
sautee sliced shallot, garlic and spring onion till until fragrant and slightly wilted, season with a pinch of salt and pepper.

add rice and i like to add one ice cube (just to make the rice soften) add more butter and a splash of soy sauce.
Step 4
mix well and crank up the heat to crisp the rice and not mushy.
Step 5
taste and adjust saltiness and serve!
Step 6
for the salmon, season with generous salt and dash of cooking/normal sake.
Step 7
heat the pan (medium), put a bit of oil and put the fish skin side down.
Step 8
cook each side around 2-3 minutes, i like it medium so that's why. add butter on the last minutes and serve em.
