Instructions

Step 1
Preheat your oven to 190 degrees Celsius. Over a low to medium heat, melt the butter in a large pan until foaming, then add carrots and onion and cook until softened
Step 2
Sprinkle flour over the top, then stir continuously while this cooks for another three minutes
Step 3
Add your oat milk and stock and mix, then add your vegan chicken, herbs and pepper. Allow this to cook for a couple more minutes
Step 4
Add your frozen peas and allow this mixture to cook for another couple of minutes
Step 5
Pour your mixture into a pie dish, then place your puff pastry over the top. Trim any excess pastry around the edges, then crimp the edges with a fork and poke in a couple of holes for ventilation. Decorate the top if desired, and baste over your egg wash mixture
Step 6
Bake for 25 minutes, or until the pastry is golden brown
Step 7
Serve and enjoy
