Step 1
Preheat oven to 375 degrees. Mix together sour cream, onions, 1 1/2 cup cheese, cumin and cayenne pepper.
Step 2
Heat oil in a small skillet on medium high heat. Pour enchilada sauce in a bowl. Dip tortillas in hot oil then into the sauce. Put 2-3 tablespoons filling into tortillas. Roll up and place in a 9x13 pan. Repeat with remaining tortillas. Cover the enchiladas with the remaining cheese.
Step 3
Bake for 15-20 minutes.
