Instructions

Step 1
Preparation: Drain chickpeas and set aside the aquafaba. Chop all vegetables.

Cook Mushrooms: Boil mushrooms in water with a pinch of salt until water evaporates.

Food Processor: Pulse chickpeas to a meaty texture. Add beets, most carrots, and some onions. Pulse to a ground beef-like consistency.

Combine: Transfer to a large bowl. Add remaining onions, carrots, celery, and garlic. Mix.
