Instructions
Step 1
Preparation: Drain chickpeas and set aside the aquafaba. Chop all vegetables.
Step 2
Cook Mushrooms: Boil mushrooms in water with a pinch of salt until water evaporates.
Step 3
Food Processor: Pulse chickpeas to a meaty texture. Add beets, most carrots, and some onions. Pulse to a ground beef-like consistency.
Step 4
Combine: Transfer to a large bowl. Add remaining onions, carrots, celery, and garlic. Mix.
Step 5
Dry Ingredients: Add oats, flax, nutritional yeast, starch, and thyme. Mix.
Step 6
Wet Ingredients: Add aquafaba, ketchup, yeast extract, barbecue sauce, liquid smoke, smoked paprika, and black pepper. Mix.
Step 7
Baking Dish: Oil an 11-inch loaf pan and line with parchment paper. Press the mixture into the pan.
Step 8
Bake: Preheat oven to 375°F. Bake for 30 minutes.
Step 9
Glaze: Mix ketchup, barbecue sauce, and brown sugar. Apply to loaf.
Step 10
Final Bake: Bake for another 30 minutes.
Step 11
Rest and Serve: Let it rest for 10 minutes before slicing.
