Herbie Meatball Bean Soup

Everytime I make this everyone has at least one bowl so it’s very tasty . Meatballs cooked in delicious broth with herbs potatoes noodles and beans make sure there is a yummy bite to every spoonful.

Instructions

Step 1
Peel the potatoes then cut into bite size pieces and add them to a large pot. Next add the finely chopped carrot and then mash up the meat with your hand to make it more smooth then form into small meatballs and add to the pot

Step 2
Add 7 cups of veggie broth or a good quality broth ( this is important as this is giving a lot of flavor ) then add a good dash of black pepper And bring this to a boil . Some foam may be seen on top you can just skim it off . Reduce the heat to medium high and cook for about 18 minutes

Add kidney beans and soup noodles to the pot I use the small vermicelli noodles that cook quick . Cook 3 minutes then add chopped dill and scallions and adjust the seasoning to taste
