Step 1
For the dumplings Boil and mash 6 floury potatoes then add egg yolks salt and pepper to taste thyme and potato starch ( sun flour if you can’t find potato starch ) mix to a dough and roll into small balls
Step 2
For the soup in a large pot add a little dash of olive oil and fry the shallot and garlic for two minutes then add the cabbage and carrot and fry two more minutes .
Step 3
Mash the ground beef with your hands then roll into lots of little meatballs and add that to the pan . Let it fry and get a little color on one side . Let the other side without a crust so the broth will soak in later
Step 4
Add in 6 cups good quality veggie broth bring to a boil and simmer 15 minutes
Step 5
Add in the dumplings cook two minutes then add the small fine vermicelli soup noodles and dill . Cook two minutes season with salt and black pepper to taste then serve
