This chicken pepperoni recipe is fantastic served over spaghetti pasta, or as is with some good artisan bread and a salad.

Instructions

Step 1
On a plate or shallow bowl combine bread crumbs, parmesan cheese, garlic powder, salt and pepper to be used to coat chicken pieces.
Step 2
Divide each chicken breast into two pieces by cutting 2/3 distance from the thinnest end of the breast. Fold a large piece of plastic wrap over chicken and pound down to 1/2 inch thickness. Repeat for each remaining breast.
Step 3
Season each piece of chicken with chicken seasoning or seasoning salt.
Step 4
Coat each side of the chicken pieces in the bread crumb mixture, shaking off any excess.
Step 5
Add 1 1/2 tbsp olive oil to a large skillet and heat to shimmering but not smoking. Add chicken pieces to cover the bottom of the skillet and cook each side on medium heat for 4 minutes.
Step 6
Arrange the cooked chicken to cover the bottom of a 9x13 inch casserole dish.
Step 7
Repeat steps 4 and 5 until all the chicken pieces are cooked and arranged in the casserole dish.
Step 8
Deglaze the skillet with 1/4 cup red wine, scraping up all the cooked bits in the bottom of the pan.
Step 9
Combine tomato sauce, garlic salt, sugar, oregano, basil, and thyme in the skillet and cook over medium low heat for about 15 minutes. Salt and pepper to taste.
Step 10
Add the sauce from the skillet over the chicken pieces in the casserole dish, and cover with pepperoni and mozzarella cheese.
Step 11
Bake in a preheated 325 degrees F (165 degrees C) for 25 minutes. At the end of the 25 minutes, turn the broiler on and bake for an additional 2 to 3 minutes, or until the cheese just begins to brown. Enjoy!
