Instructions
Step 1
Peel and dice onion. Cut paneer into 1-inch cubes.
Step 2
Melt butter in a skillet over medium-high heat. Add onion and a pinch of salt. Cook 6 minutes, or until softened, then add garlic and ginger and cook 1 minute more.
Step 3
Add curry powder, garam masala, coriander and stir to coat, then add crushed tomatoes and reduce heat to low. Cook 5 minutes more, until sauce is slightly thickened.
Step 4
Transfer to a blender and add coconut milk. Blend until smooth.
Step 5
Return sauce to the skillet and season with salt and pepper to taste. Add paneer and bring to a simmer over medium heat. Cover and cook 3 minutes, or until paneer is warmed through.
Step 6
Enjoy paneer and sauce over basmati rice, with a veggie on the side.
