Instructions

Step 1
1. chop potatoes and put them in a pot to boil

2. while potatoes are boiling, chop onion and put in a saute pan on medium, or a bit lower.

3. while onion is cooking, peel and chop carrots. Add carrots to the pot where onions are cooking.

4. chop zucchini and add to carrots and onion

5. Add herbs to onion, carrots and zucchini
Step 6
6. Remove potatoes from cooking water.
Step 7
7. Put 1/2 cup of water into a blender.
Step 8
8. DON'T BLEND until step 10! Add 1 cup of the cooked potatoes (more or less, depending on the size of your blender), into the blender. DON'T Blend until step 10 9. Put the lid on the blender

10. Turn on the blender and puree the potatoes and bean flour. Empty the contents of the blender back into the cooking pot.
Step 10
11. Repeat steps 7-10 until most or all of the cooked potatoes are blended.
Step 11
12. On low to medium low heat, continue cooking the soup for 15 minutes. Add more salt, pepper, or other seasonings to your taste.
Step 12
13. Serve garnished with sour cream, shredded cheese, chives, bacon bits, etc.
