Instructions
Step 1
Combine all ingredients except spinach in a large pot over medium high heat and bring to a boil.
Step 2
Lower heat and simmer, uncovered, until lentils and vegetables are very soft, about 25 minutes.
Step 3
If desired, blend until creamy but not completely pureed (or skip this step if a chunkier soup is OK).
Step 4
Stir in chopped spinach until evenly mixed through soup (and no longer frozen, if it wasn't completely thawed). Bring back to a simmer if serving immediately.
Step 5
Serve with salt and pepper to taste, and optionally with lemon juice and/or a dollop of Greek yogurt.
