Instructions
Step 1
In a deep Skillet or large pot heat oil over medium heat. Cook the onion bell peppers stirring often until onion is translucent, about 5 minutes
Step 2
Turn the heat to medium high and add the ground turkey. Cook until browned, breaking it up with a wooden spoon as it Cooks about 7 minutes.
Step 3
Add garlic powder chili powder cinnamon salt and pepper. Stir continuously for 1 minute
Step 4
Stir in the diced tomatoes in their juice and the pumpkin puree. Bring the mixture to a simmer for about 20 minutes. If it gets too thick, one to two cups water or vegetable stock, a half cup at a time, until desired consistency is achieved.
Step 5
Serve with toasted pumpkin seeds, dairy-free sour cream, and cilantro
