Instructions

Step 1
1. Cook pasta according to the package. Reserve 1/2 c of pasta water.
Step 2
2. Wash and dry 2 poblano peppers. Roast using your preferred method. I air fry at 400* F for 10 minutes.

3. Place in a bag (or leave in air fryer) for 10-15 minutes before peeling and removing the seeds.
Step 4
4. Add the poblano peppers, cottage cheese, laughing cow wedges, cilantro, onion, chicken bouillon, and seasonings of choice to the blender. Blend until smooth.
Step 5
5. Add 2 tbsp of light margarine to a pan and melt.
Step 6
6. Add crema verde and summer for 10 minutes.
Step 7
7. Add cooked pasta and mix well.
Step 8
8. Top with 1/2 cup fat free mozzarella cheese.
Step 9
9. Season 4 4 ounce thinly sliced chicken breast and spray with avocado oil to taste.
Step 10
10. Air fry at 400° F for 6-8 minutes.
Step 11
11. Divide into 4 equal servings - ~1 cup. Serve with 4 ounces of air fried chicken breast and 2 cup broccoli.
