Instructions
Cook the shrimp
Step 1
Start by prepping 2 lbs of shrimp.

Step 2
Once deveined / shelled evenly coat your shrimp with salt, pepper, paprika, oregano, cayenne and onion powder.






Step 3
Add olive oil to a hot pot over medium heat and add shrimp once oil is ready, cooking on both sides.


Step 4
Once finished set aside and save for later.

Cook the noodles
Step 5
Remove your pot from the heat and lightly rinse. We want to keep some of the seasoning in it for extra flavor!
Step 6
Add 8 cups of water to the pot and bring to a boil.

Step 7
Once boiling add a pinch of salt and the uncooked noodles. Stir and cook until al dente.


Step 8
Save 1/2 cup of pasta water for later. Remove from heat and drain the pasta.

Cook the sauce
Step 9
Return your pot to low-medium heat. Add 1 tbs of butter and melt.

Step 10
Once melted and hot add in 1/4 chopped onion, 3 chopped garlic cloves and a pinch of oregano. Stir and cook until fragrant.



Step 11
Add 2 tbs tomato paste along with 1 cup of halved cherry tomatoes. Cook until soft.


Step 12
Using a spoon or hand mixer smash or blend your tomatoes until desired.
Step 13
Bring up the heat slightly and add 3/4 cup of vodka. Bring to a light boil and cook down for 3-4 minutes.

Step 14
Once cooked down a bit whisk in 3/4 cup of heavy cream.

Step 15
Once the cream is fully incorporated add in your cooked noodles and extra pasta water. Cooking together for an additional 2-3 minutes.


Step 16
Remove pot from heat and stir in parmesan until you reach your desired thickness.

Step 17
Taste your sauce and add salt if needed or cayenne if you want an extra kick.


Serve Warm

Top with basil / more parmesan if desired.
