Ingredients

1 Tbspolive oil
1red onion
sliced
2 cupscherry tomatoes
a variety of your choice, whole
1fennel bulb
medium, fronds and tough end removed, sliced
½ cupchicken stock
or vegetable
10 sprigsfresh thyme
4white fish fillets
such as basa, cod, or hake
salt
to taste
pepper
to taste
Creamy Tahini
Instructions
Step 1
In a large skillet or frying pan, heat olive oil over medium heat.
Step 2
Add the red onion to the pan and sauté until they become translucent and slightly caramelized, which should take about 3-4 minutes.
Step 3
Add the whole cherry tomatoes, sliced fennel, stock, and the fresh thyme sprigs to the pan. Season with salt and pepper to taste.
Step 4
Cover the pan and bring to a simmer. Allow it to cook for 10 minutes, or until the tomatoes start to soften and burst.
Step 5
Carefully nestle the fish fillets in the mixture.
Step 6
Cover the pan again and let the fish cook for an additional 8-10 minutes, or until the fish is cooked through. The cooking time may vary depending on the thickness of your fish fillets. Ensure the fish flakes easily with a fork.
Step 7
To make the tahini sauce, in a small bowl, combine tahini with lemon juice and water. Stir vigorously until it becomes thick and creamy. Season with salt and pepper.
Step 8
Serve fish in the skillet and drizzle over tahini and an extra drizzle of olive oil.
