Instructions

Step 1
Wash the fish well with vinegar, salt and water and leave it to dry.
Step 2
Place half of each of the garlic gloves, coriander and half of the chili, in a food processor and pulse, scraping down the sides occasionally, until finely chopped, add 2 tablespoon of oil and little of lemon juice, pulse until mixture forms a paste.

Preheat oven to 200°C. Place fish in a large deep-sided baking tray, rub the mixture all over the fish and season, also put slices of lemon in the fish.

Pour over 1/4 cup water, cover the pan with foil and bake for 20-25 minutes until fish is just cooked through.

For the tahini sauce, place the balance of the garlic, chili, coriander, add lemon juice, tahini, salt, and 1/2 cup water in a blender, season and blend until combined.

The sauce should have a rather liquid consistency, and should have a nice balance of Tahini, garlic and lemony flavors. If the sauce is too thick, add a cup water and a bit more of lemon juice.

Place 2 tablespoon of oil in a large saucepan over medium-high heat, add the onion, garlic and coriander and cook, stirring frequently, for 5-7 minutes until golden.

Add in the tahini mixture, salt, chili and cook, stirring occasionally, for a further 4-5 minutes until combined and heated through, set aside and keep warm.

Remove fish from the oven and remove foil, pour tahini sauce over the top and bake, uncovered, for a further 10 minutes until the fish has absorbed sauce.

Transfer to a large plate, spoon over tahini sauce, sprinkle chili powder and garnish with, chopped parsley and toasted pine nuts.
