Spice up your breakfast with these deliciously fragrant eggs Asian style. No added salt, but plenty of fresh ingredients like ginger, chilli and garlic for flavour and vitamins.

Instructions
Step 1
Finely chop the spring onions. Dice the tomato. Finely chop the ginger. Finely slice the garlic. Finely slice the red chilli.





Step 2
Heat a drizzle of lime or lemon infused olive oil in a frying pan on medium-high heat. Add the ginger, garlic and half of the chilli and cook until fragrant, about 1 minute.




Step 3
Add to tomatoes and spinach and cook for another 3-4 minutes until the tomatoes have softened.



Step 4
Push the vegetables to one side, and fry the two eggs.

Step 5
Arrange on plate and sprinkle no salt chilli seasoning (S&B seven spice chilli) over the eggs and the remaining chilli slices. Serve and enjoy!
