Hearty Chili

This is the most addicting, hearty, and just plain delicious chili I've ever had. It was a night I had no idea what to make for dinner and threw it all in a pot and I've never been happier with the outcome! Even my toddler loved it!

Ingredients

0.5red onion
diced

1carrot
medium, diced

Yellow bell pepper
diced

1 lbground beef

chili powder

paprika

onion powder

garlic powder

cumin

ground coriander

Dry oregano

Ground Chipotle chile powder

salt

pepper

2 clovesgarlic
minced

1 cupschicken broth

1can black beans
drained and rinsed

1can red beans
drained and rinsed

1can fire roasted diced tomatoes

1zucchini
diced

1 Tbspolive oil

2 Tbsptomato paste
Instructions
Step 1
Set a large pot with olive oil over medium high heat and dice all veggies to your preferred size, I prefer a smaller dice.






Step 2
Add onion, pepper, and carrot to pot and saute until onion is translucent. Add seasonings as well as garlic(season with your heart, you can adjust seasonings later before simmering).










Step 3
Once spices are fragrant add the ground beef, breaking up and mixing with vegetables. Leave to brown until moisture finishes evaporating, stir and let sit to brown more until cooked through.
Push mixture to side and use 1-2 paper towels to remove excess grease. This is usually when I taste to adjust seasoning


Step 4
Add your tomato paste and let cook a minute until color darkens. Add zucchini, beans, tomatoes, and chicken broth. If mixture looks like it needs more liquid add extra broth until it looks right, keep in mind it'll get thicker as it reduces.
Give it a good mix, bring to boil, then reduce heat to low or until its at a low simmer.
Simmer for 30 minutes-2 hours. It'll be good at 30 minutes but it'll be great at an hour and a half! The longer it simmers the better.






Step 5
Serve with either crackers or corn bread!
