Ingredients

6 cupsbasmati rice
1.5kgchicken
cut into pieces
2onion
large, thinly sliced
3tomatoes
chopped
7green chilies
slit
8cloves garlic
minced
3 inchesginger
piece, grated
1 tablespooncumin seeds
crushed
1 tablespooncoriander seeds
crushed
1cinnamon stick
4bay leaves
8cloves
4black cardamoms
2 tablespoonsred chili flakes
½ cupdried plums
1 cupyogurt
1 cupoil
salt
to taste
fresh coriander leaves
for garnish
8 cupswater
Instructions
Step 1
Wash the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
Step 2
Heat oil in a large pot over medium heat.
Step 3
Add sliced onions and sauté until golden brown.
Step 4
Add minced garlic and grated ginger. Sauté for a minute until fragrant. Add cloves, black cardamoms, cinnamon stick and bay leaves. Let them splutter.
Step 5
Add chicken pieces and cook until they are browned on all sides.
Step 6
Add yogurt, red chili flakes , coriander & cumin seeds , and salt. Mix well and cook for 6-7 minutes.
Step 7
Add sliced tomatoes , green chillies and dried plums. Mix well and cook for another 2 minutes.
Step 8
Add water , cover the pot and bring to a boil.
Step 9
Add soaked and drained rice to the pot. Stir gently.
Step 10
Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
Step 11
Once the rice is cooked, place on dam on low heat for 20 minutes. Cover tightly with tea towel and lid on the top. After remove from heat and let it sit covered for 5 minutes.
Step 12
Fluff the rice with a spoon and garnish with fresh coriander leaves and fried onions.
Step 13
Serve hot with raita or salad.
