Ingredients
4 servings
3 tablespoonsolive oil
1onion
small, chopped
2cloves garlic
minced
3 tablespoonscurry powder
1 teaspoonground cinnamon
1 teaspoonpaprika
1bay leaf
½ teaspoonfresh ginger root
grated
½ teaspoonwhite sugar
salt
to taste
2skinless boneless chicken breast halves
1 tablespoontomato paste
1 cupplain yogurt
¾ cupcoconut milk
0.5lemon juiced
½ teaspooncayenne pepper
Instructions
Step 1
Heat olive oil in a skillet over medium heat. Sauté onion until lightly browned.
Step 2
Stir in garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar, and salt. Continue stirring for 2 minutes
Step 3
Add chicken pieces, tomato paste, yogurt, and coconut milk. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes.
Step 4
Remove bay leaf, and stir in lemon juice and cayenne pepper. Simmer 5 more minutes
Step 5
Serve hot and enjoy!
