Sweet Potato + Black Bean Tacos

Instructions

Step 1
Line air fryer with foil + cooking spray and bake sweet potatoes at 320° for 12 minutes. Once finished, shake potatoes with olive oil and cook for another 4 minutes at 400°.
Step 2
While potatoes are cooking, heat large skillet with olive oil and saute diced onion for 4-5 minutes.
Step 3
Stir in black beans, spices, and salsa and allow to simmer for another 4-5 minutes.
Step 4
Set heat to lowest and stir in spinach. Once spinach is soft, add sweet potatoes to mixture.
Step 5
Heat tortillas (I used 3 small keto tortillas) in microwave for 20 seconds.
Step 6
Place tortillas on plate and add mixture to each tortilla. Carefully place tortillas in lined air fryer and cook at 350° for 2-3 minutes (or to desired crispiness).
Step 7
Sprinkle shredded cheese on each taco and cook again at 375° for about 1-2 minutes.
Step 8
Plate and enjoy! 🌮
