Step 1
Shrimp: Marinate the shrimp in olive oil, lime juice and zest, minced garlic, paprika, salt, and pepper for about 15-30 minutes. Then, quickly sauté them in a hot pan until they are pink and cooked through.
Step 2
Quinoa Salad: Cook the quinoa as per package instructions and let it cool. Mix in the tomatoes, cucumber, red onion, and fresh herbs. Dress with lemon juice, zest, olive oil, and season with salt and pepper. Top with crumbled feta if using.
