Instructions
Step 1
Peel the potatoes, chop in half and add to a large saucepan with water. Bring to the boil and allow to cook until soft (roughly 20mins).
Step 2
Prep the veggies whilst you heat oil in a large pan on a medium to high heat. Add diced onion, then allow to soften before adding chopped mushrooms. Cook for 5 minutes.
Step 3
Add chopped celery and grated carrot. Stir often to avoid catching. Once that’s softened, add minced garlic and allow to cook for a couple of minutes.
Step 4
Chuck in mince, season with salt & pepper then splash with Worcestershire sauce. Mix in tomato purée then add peas and stock. Leave to simmer until the mince and peas have cooked.
Step 5
Pre-heat your oven to 180C fan whilst you prepare the mash. By now the potatoes should be cooked. Drain then add cream, a handful of chopped chives, salt & pepper and mash until fluffy.
Step 6
In an ovenproof dish, add a layer of all the mince mixture then a layer of all the mash mixture. Even the mash out with a fork and make a nice pattern.
Step 7
Once the oven has preheated, place the pie in it and cook for 30mins (or until the mash has started to colour) - enjoy!
