Instructions

Step 1
Marinate the Steak: Combine the steak strips with 1 tablespoon of soy sauce, 1 tablespoon of red wine vinegar, and minced garlic. Let it marinate for about 15-30 minutes.
Step 2
Cook the Fries: Fry the potato strips until golden and crispy. Set aside on a paper towel to drain.
Step 3
Cook the Steak: In a large skillet or wok, heat some olive oil over high heat. Add the steak strips (reserve the marinade) and stir-fry until they are just cooked through. Remove the steak and set aside.

Sauté Vegetables: In the same skillet, add a bit more oil if needed. Add the red onion and sauté for a few minutes until they start to soften. Add the aji amarillo paste and stir well.

Combine: Add the tomato wedges, remaining soy sauce, and red wine vinegar. Cook for a couple of minutes until the tomatoes start to soften.

Finish the Dish: Return the steak to the skillet, add the fries, and toss everything together. Cook for another minute. Season with salt and pepper to taste.

Garnish: Turn off the heat and stir in the chopped cilantro.
