Healing Clear Soup

In Chinese medicine and in Macrobiotic, a clear soup is a very good remedy to remove dampness from the body and strengthen immunity by strengthening organs such as the spleen.
It’s such a simple recipe that you will be shocked of how delicious it is!
I have ingredients that you might not easily find in the GCC, so each of the ingredients I have an alternative for you to enjoy.

Ingredients
6 servings
1carrot
5shiitake mushroom
1komatsuna
or bok choi
1brussel sprout
whole, top with the hiding mini sprouts, or spinach
60ggreen beans
1shallot
small
1spring onion
1garlic clove
3 cupsdashi
or water
3 slicesjalapeño

Instructions
Step 1
Let’s get prepping. If you choose to use Dashi, please look up How to: Dashi.
Step 2
My Dashi will add an extra depth of flavor for sure, and health benefit having kelp in it. If you are short for time, water will do :)
Step 3
Carrot; I like them round or half mooned. Shiitake mushroom cut into quarters.
Step 4
Now the greens, trim the leaves first, the stalks chop evenly and then roughly chop the leaves.
Step 5
Greens beans, chop into ½ inch pieces.
Step 6
Slice the garlic, shallot, jalapeño and green onions.
Step 7
Place the spices in a spice infusion bag.
Step 8
Place vegetables & spice bag in a pot, cover with the liquid (dashi or water)
Step 9
Simmer for 10 to 15mins. And that’s all.
Step 10
If you want this soup to be more of a filling meal, then serve with noodles, rice or sourdough loaf.
