start with 2 cups dry beans (about 1 pound) which should yield about 5 cups of cooked beans. I like brown beans, and almost any kind of bean works. Makes about 6 - 1 cup portions.

cooked, or pinto, After soaking beans for 12-24 hours, cook for 30 -40 min in a pressure cooker on high, Make sur eto cover the beans with at least 2 inches of water, Use slow release for at least 10 min Drain the water

2bay leaves
1red bell pepper
seeded, and diced
0.5onion
medium, diced
4green onions
minced, use white and green parts and save some of the green for garnish
5 clovesgarlic
minced
½ teaspoonapple cider vinegar
or white wine vinegar
1 teaspoonsmoked paprika
½ teaspoonground cumin
½ teaspoonground black cumin

black pepper
to taste
1 teaspoonHimalayan salt
or Celtic
Instructions
Step 1
When serving add a little olive oil or more salt and pepper to taste
Step 2
Goes well with sautéed collards (or kale) and rice
