MEXICAN BREAKFAST FOR WEIGHT LOSS: CHORIZO Y HUEVO BURRITOS 🌯 If you’re always on the go this is the breakfast for you! Not only can you meal prep these and freeze them for up to 3 months but they also pack over 40 grams of protein. AND for my carb conscious followers, each burrito is only 11 net carbs. Prep these as the next couple of weeks will be the busiest time of the year!

Instructions

Step 1
1. Mix egg whites and eggs with salt and pepper.

2. Chop onions (optional)

3. In a pan, cook the chorizo for 4 minutes. Break it apart.

4. Mix in the onions. Mix well and cook for an additional 2-3 minutes.

5. Add in the egg mixture, and combine. Cook until eggs are completely done (3-4 minutes).

6. Warm up your tortillas for 30 seconds on each side.

7. Add the egg and chorizo and cheese to the tortilla and fold.
Step 8
8. FREEZER DIRECTIONS: Roll and wrap in plastic and foil to avoid freezer burn. They are good for 3 months in the freezer.

9. To warm up, loosely wrap the tortillas in a damp paper towel and place in the microwave for 2:30-3:00.

10. Optionally, lightly grease a comal with oil spray and crisp up for 1-2 minutes on each side or until all sides are golden brown.
