Ingredients

300gMushroom
chopped
2onions

1 teaspoonginger
chopped
5cloves of garlic

2Tomatoes
Medium-sized, or 1/2 Cup Tomato Puree
4 TablespoonCoconut Milk
3 tablespoonvegetable oil
1Bell Pepper
cubed
2cloves
5Black Peppercorns
2green cardamom
2 teaspoonginger garlic paste
½ teaspooncumin seeds
1black cardamom
1 teaspoonturmeric powder
2 teaspooncoriander powder
3 TeaspoonRed Chilli Powder
0.25 CupWater

Instructions
Step 1
Dice onions and mushrooms, set aside. Blend onions, garlic and ginger to make a paste, set aside.
Step 2
Chop tomatoes and blend them to make puree. Whisk in coconut milk until smooth and creamy.
Step 3
Heat up oil and add ground onion, ginger and garlic paste. Sprinkle in cloves, black pepper, green cardamom, black cardamom, cumin seeds, and salt.
Step 4
Cook the paste on a low flame. Stir until the paste gets a crispy, golden color.
Step 5
Add the tomato puree and sprinkle in turmeric, red chili powder, coriander and salt.
Step 6
Stir the mix until the oil starts merging with the masala.
Step 7
Add the mushrooms, coconut milk and water. Stir well.
Step 8
Cover the pan with a lid and cook the curry on low-medium flame for 15-20 minutes.
Step 9
Top the curry with 1 tablespoon of coriander leaves.
