Instructions

Step 1
1. Preheat the oven to 400° F.

2. Prep the chicken by separating the leg quarters into drums and thighs or keep it as is, peel and slice the garlic, onions and potatoes.
Step 3
3. In a large bowl make the marinade by combining together the lemon juice, olive oil, pomegranate molasses, salt, onion powder, garlic powder, oregano, black pepper, cumin and cayenne pepper. Give it a good whisk, then add in the chicken, garlic, onions and potatoes. If you have time marinade for at least 30 minutes or longer. If you don’t have time no worries it will still taste amazing.
Step 4
4. Transfer everything into a roasting pan, I like adding the onions and potatoes on the bottom and laying the chicken on top. Pour all the marinade over the chicken.
Step 5
5. Roast uncovered for one hour, basting every 20 minutes, until the chicken is cooked through and potatoes and onions looks sticky and caramelized. Enjoy!
