Step 1
Slice the cabbage, carrot, and green onion thinly.
Step 2
In a bowl, crack 2 eggs. Add a pinch of salt and a bit of pepper. Mix well. Add the sliced vegetables to the egg mixture. Mix well.
Step 3
Melt some butter in a pan. Place the bread slices in the pan over medium heat. Cook until they turn golden brown.
Step 4
Once they are partially cooked, flip them over. Melt more butter in the pan and coat the bread slices. Transfer the toasted bread to a plate and let them cool.
Step 5
Wipe the pan with a kitchen towel. Add some more butter to the pan. Pour in the vegetable and egg mixture, shaping it to match the shape of the bread slices. Cook it over medium to medium-low heat.
Step 6
Sprinkle a bit of cheese on top. When the bottom is partially cooked, fold it in half. Cook for another 1-2 minutes over low heat, then remove from the pan.
Step 7
2 minutes later: Place the cooked vegetable and egg on top of the toasted bread. Sprinkle a bit of sugar and a little ketchup. You can enjoy it as is or wrap it up and cut it in half.
