Instructions
Step 1
Place cutlets in a heavy duty zipper bag and pound gently to 1/4 inch thick.
Step 2
Season generously with salt and pepper.
Step 3
Prepare flour, 3 beaten eggs, and bread crumbs on three separate plates. Dredge one cutlet at a time in the flour and transfer it to the egg dish. Coat all sides with egg and shake off any extra before moving the cutlet to the bread crumbs. Press crumbs lightly into the meat.
Step 4
Heat oil to 350 F.
Step 5
Gently lower meat into the oil. Fry for about 1 1/2 minutes then flip for another 1 1/2 mins till set. Continue until browned on both sides then transfer to a paper towel to drain and salt right away.
