dissolve the cornflour in the cold water

combine the cucumbers, sea salt, and 400ml cold water in a bowl and soak for 10 mins

whisk together the rice vinegar, mirin, egg yolks, salt and 1 tablespoon of water and warm in the microwave for 2 1/2 mins
