'Borani' - blanched spinach with soya yoghurt

Persian version of tzatziki. Less garlic and uses spinach instead of cucumber. Serves 4 approximately.

Step 1
Sauté spinach in the hot oil until it wilts, then chop corsley and leave to cool.
Step 2
Mix the soya yoghurt, garlic, spinach together and season week to taste with salt and pepper.
Step 3
Cool in the fridge for 30 minutes or so.
