1 Tbspolive oil

1onion

3cloves garlic

ginger
small

2sweet potatoes
peeled & diced

1 Tbspcurry powder

½ tsptumeric

cayenne

1 cupred lentils

1 litrestock

Can of coconut milk

salt

pepper

lime
to taste
Notes:
Instructions
Step 1
Heat oil. Add onion, garlic & ginger & sauté for 3 mins.
Step 2
Add curry powder, tumeric & cayenne. Stir & sauté for another min.
Step 3
Rinse the lentils & add with the diced sweet potato. Sauté for a couple of mins.
Step 4
Add the stock and simmer until lentils & sweet potato are cooked.
Step 5
Add coconut milk and some spinach and simmer for another 5 mins.
Step 6
Add some fresh coriander and blend.
