Ingredients
4 servings

350gextra firm tofu
block

1 tablespoonavocado oil

2 teaspooncornstarch

½ teaspoonblack pepper

½ teaspoonsalt

1 ½ tablespoongarlic
minced

ginger
grated, ginger paste is fine too

3 tablespoonslow sodium soy sauce
use GF tamari to make this gluten-free

2 teaspoonchili oil

1 tablespoontoasted sesame oil

2 tablespoonspeanut butter

2 tablespoonslime juice

¼ cupbrown sugar

8 ozsnap peas

2stalks celery
sliced at an angle

1 Tbspgrape seed oil

1carrot
Instructions
Step 1
Press tofu:
Step 2
Sandwich between paper towels and two plates. Place a heavy object (like a 28 oz can) on the top plate. See photo in post for a visual. Press for 30 minutes or more.
Step 3
Heat air fryer to 200°C/ 390°F.
Step 4
Cut tofu into ½ inch or ¾ inch cubes.
Step 5
Toss tofu in avocado oil, then in cornstarch. Season with salt and pepper.
Step 6
Cook for 13 minutes, shaking every 5 minutes, or until cooked to your liking.
Step 7
Tofu is ready when it is firm on the outside. It should still be soft on the inside
Step 8
Add all dressing ingredients to a jar, shake well to mix
Step 9
Make tofu as directed
Step 10
Add grapeseed oil to a large pan over high heat. When hot, add vegetables and cook, tossing regularly, until they begin to char.

Add peanut sauce
Step 12
Turn off heat, add crispy tofu, and toss to coat.
