Instructions
Step 1
Peel and chop carrots and potatoes and place in medium - large saucepan with the water. Bring to a boil, cover and simmer until tender (10-15m)
Step 2
Meanwhile, heat oil in a small skillet. Add onion and salt, and sauté over medium heat for about 5m. Add garlic and dried herbs and sauté about 5m more or until onions are soft. Stir in lemon juice.
Step 3
Purée everything together in a blender and transfer to a Dutch oven. Simmer gently 8-10m. Serve hot, topped with sprinkling of chives
