Instructions

Step 1
Add black beans, salsa and cumin to a pot. Simmer for 3-5 min.
Step 2
Add spinach, then season with salt and pepper. Cook until wilted, add lime juice, then set aside.
Step 3
Add eggs to a pan and cook until almost set.
Step 4
Spread bean mixture on half of the eggs, then flip the other half of the eggs over the beans.
Step 5
Top with microgreens and/or nutritional yeast.
