Instructions

Step 1
I like to boil down a few pieces of whole chicken to yield at least 1.5lbs of chicken meat. After de-boning the meat I put all the chicken pieces back in the stock to continue reducing.
Step 2
Heat a large skillet over medium heat. Melt butter and saute onions for 2 minutes. Add diced garlic and ginger, saute for additional 2 minutes.
Step 3
Stir in the tomato sauce and all spices. Add the chicken stock and bring to a simmer.
Step 4
Cut up chicken into preferred size and add to sauce. Simmer for 10 minutes.
Step 5
Stir in coconut milk and continue to simmer for 10-15 minutes.
Step 6
Serve over basmati rice.
