Instructions
Step 1
Start by boiling some water and cooking the quinoa according to the package instructions (it shouldn't take more than 10 minutes). In the meantime, chop the onion and mushrooms.
Step 2
In a pan on high heat with a bit of olive oil, add the chopped mushrooms and onion and a pinch of salt. Let them sweat the moisture out for 3-4 minutes and remove from the heat.
Step 3
In a food processor add the cooked quinoa, mushrooms and onion, kidney beans and walnuts. To that add the spices and aromatics and blend until combined.
Step 4
Finally, adjust the consistency with the breadcrumbs until you can form a patty with your hands without it sticking too much. Cook on medium-high heat in a pan with some olive oil 3-4 minutes per side, until brown and delicious.
