Instructions

Step 1
Cut tortilla into strips and fry in oil until golden brown. Set aside.
Step 2
Add the onions, garlic and chilli. Fry for one minute. Add the tomatoes and fry for another minute.
Step 3
Add the beaten eggs and chives and stir. Do not overcook the eggs, they need to be quite soft. Season with salt and pepper.
Step 4
Put the tortilla strips on a plate with the egg mixture.
