Instructions
Step 1
Cook spaghetti according to packet directions. Drain.
Step 2
While the spaghetti is cooking, heat a frying pan over a high heat. Add the onion and saute for 2 minutes. Add the garlic and saute for another minute. Add the mushrooms and saute for 2 minutes.
Step 3
Add the plant milk, stock, dijon mustard and nutmeg. Stir, while coming to a boil, then reduce the heat and simmer for 10 minutes.
Step 4
Add the cashew sour cream and stir into the sauce. Add the spaghetti and the spinach and fold them through the sauce.
To serve
Step 5
Serve in individual bowls topped with the freshly ground salt and pepper to taste, nutritional yeast and chopped almonds.
