Step 1
Mix the chicken with the marinade ingredients and 1/4 cup of the coconut milk in a bowl marinate overnight.
Prepare skewers
Step 2
Thread chicken onto skewers 4-5 pieces per skewer
Cook skewers
Step 3
Heat 1 1/2 of oil in a large non stick pan over medium heat. Cook 5-7 skewers at a time for 3 minutes on each side until golden. Transfer to a plate and loosely cover with foil to keep warm while you cook the remaining skewers
