Thai Green Chicken Curry Bake Meal Prep π¨βπ³π
This single serve glass bowl meal prep is so easy and such a time saver!!β¨
I highly recommend you give it a go π€€
Ingredients (for one serve):
50g x raw basmati rice π
150g x lean boneless chicken breast (diced)
1/2 tsp x crushed garlic π§
1/2 tsp x crusher ginger π«
1/2 tsp x lemongrass paste
50ml x chicken stock
50-100ml x Thai green curry sauce (I used Passage to India)
30ml x light coconut milkβ¨β¨*You might want to use more or less stock depending on what green curry paste you use. I used more of a green curry sauce therefore I used slightly less stock.
Optional toppings when serving:
Fresh Chilli πΆοΈ
Fried Shallots

Method:
Preheat the oven to 180 Degrees Celsius.
In a glass meal prep container add your rice, chicken, garlic, ginger, lemongrass and then the stock. Now add your green curry sauce or paste followed by the light coconut cream. Give it a good mix. Add in your vegetables and give it another mix. Cover with alfoil and bake in the oven for around 45-55 minutes or until itβs cooked!
Let cool and store in the fridge!
Optional: when serving add sliced chilli and fried shallots!
