Hidden courgette prawn spaghetti

Instructions

Step 1
Peel the courgette into julienne ribbons or normal ribbons (I use a julienne peeler).
Step 2
In a large pan on a low medium heat, sweat the diced shallot, sun dried tomatoes, chopped basil stems, a pinch of chilli flakes and garlic in a little olive oil and pinch of salt until softened. Watch they don't burn.
Step 3
Add in the tomato puree and cook out for a few minutes before adding the cherry tomatoes. Cook for 5 minutes until they start to burst.
Step 4
Cook the spaghetti in well salted water until al dente.
Step 5
Add 2-3 tosp pasta water to the tomato pan and mix well to form a sauce. Add lots of fresh torn basil to wilt, 1 tosp balsamic vinegar then the prawns until just cooked. Finally add in 40g grated parmesan and 1 tosp creme fraiche and mix well to form a smooth sauce, loosen with a little more pasta water if needed.
Step 6
Add in the pasta and courgette ribbons. Toss to mix everything together, add a little more pasta water if it's looking dry to make more saucy. Season to taste if needed.
Step 7
Serve with a little extra parmesan and pinch of chilli flakes.
