Step 1
Add all ingredients to blender and blend until completely smooth. Lightly coat griddle with coconut and place over medium heat. Add 1/3 cup of batter for each pancake and cook 2 to 4 minutes until slightly puffy. Flip and cook until golden brown on underside.
