Ingredients

32 ouncesboneless skinless pork shoulder
cut into 2-inch chunks
1 tablespoonolive oil
½ cupsoy sauce
¼ cupbrown sugar
¼ cuppineapple juice
2 tablespoonsrice vinegar
1 tablespoonketchup
1 tablespoonminced ginger
1clove garlic
minced
½ teaspoonground black pepper
¼ teaspoonred pepper flakes

16 ouncescan pineapple chunks

Instructions
Step 1
Heat olive oil in a large skillet over medium-high heat. Season pork with salt and pepper. Add pork to the skillet and brown on all sides, about 5 minutes per side.
Step 2
Transfer pork to a slow cooker. In a bowl, whisk together soy sauce, brown sugar, pineapple juice, rice vinegar, ketchup, ginger, garlic, black pepper, and red pepper flakes (if using). Pour the sauce over the pork in the slow cooker.
Step 3
Add the undrained pineapple chunks to the slow cooker. Stir to combine.
Step 4
Cover and cook on low for 8-10 hours (4-5 hours high), or until the pork is very tender and shreddable.
Step 5
Using two forks, shred the pork in the slow cooker.
Step 6
Serve the Hawaiian pork over cooked rice, with the sauce spooned over the top. You can also serve it on Hawaiian rolls for a delicious pulled pork sandwich.
